Instructions
  1. Peel the shallots and chop in half. De-seed the chilli . Take the outside layer of the lemongrass and roughly chop. Put them all in a blender, and pulse until will chopped.
  2. Heat a large wok over a medium heat, and spray with coconut oil. Add the shallot, chilli and lemongrass mixture and fry until soft (around 5 minutes).
  3. Add the Ground Coriander and Ground Cumin and stir-fry for a further minute.
  4. Add the tinned tomatoes and cook for a further 2 minutes.
  5. Chop the baby corn and snap peas to bite sized pieces. Slice the red onion into large slices. Add to the mixture and cook for 5 minutes.
  6. Add the curry paste and coconut milk, staring well to combine. Turn the heat down to low and let the curry simmer for 15-20 minutes, until reduced slightly to thicken.
  7. Add the prawns, and cook for a further 5 minutes until they are warmed through. Serve with some brown rice.
Recipe Notes

If you like it spicy, just add more/hotter chillies to the mix.
